Milk contains a disaccharide called lactose which, for those suffering from lactose intolerance, cannot be broken down into two monosaccharide, glucose and galactose. There are some people who are allergic to dairy products. It is to be noted that being allergic to dairy products is different from being lactose intolerant. Lactose intolerance occurs due to lactose while allergy mostly happens because of the presence of casein, one of the many proteins that are found in milk. When a person has a milk allergy, he not only suffers from gastrointestinal disorders but also suffers from respiratory problems. He may also have dermatological issues.

Vegans adapt to such a lifestyle because they do not want to exploit animals for human uses. So they do not consume meat, poultry, fish, honey and various dairy products that include butter, cheese, smoothies and even the ice creams that makes you want to go weak in your knees.

For people who are lactose intolerant, finding edible and tasty treats can be troublesome. Most treats, such as chocolate, ice cream and sponge cakes have cream or milk in them, and conventionally they are cow’s milk. This makes them unsuitable for people with lactose intolerance.

Only some forms of lactose intolerance allow the sufferers to still eat small amounts of chocolate, and even simple things like a cup of tea are hard to stomach if you are unlucky enough. But, nowadays, there are alternatives to the ordinary treats and sweets of the norm which contain no dairy products, and therefore no discomfort! In a few words, organic is healthier. You do not have to worry about the use of chemicals or genetically modified seeds. There’s just something decadent about finishing off a meal with a scoop (or two… or three) of creamy, delicious vanilla ice cream. Or, let’s be honest, any kind of ice cream. However, for those of us with a lactose intolerance problem, that frosty dessert can turn from delight to despair. Thousands of people suffer from the inability to properly digest to dairy products, and for us, there is a solution!

Non-dairy desserts are becoming more and more popular. And, because of this rise in fame, they’re getting better. No longer must we make do with tasteless, unforgiving desserts that go down like cardboard, and taste just as ‘yummy.’ Now we have things like coconut milk ice cream. In a word: WOW! Talk about wonderful! Two of the world’s most fantastic treats, all rolled up into one dish. That is what I’m talking about.

There are all kinds of non-dairy desserts out there; you just have to know where to look. Goodies like baked bananas, which normally call for butter (another sad no-no) are enjoyable both while eating and, more importantly for some of us, afterward. You can find recipes to make dairy free baklava, chocolate ice cream shakes (made with non-dairy chocolate ice cream, of course) and chocolate whoopie pies. Mmm, delish, right?! Even breakfast smoothies can be made using a simple combination of strawberries, mangos and carrot juice; it might sound awkward, but just wait until you try it.

It isn’t just the fact that you can make your own non-dairy dessert; you can find them in grocery stores too. Lots of us are too busy to take the time and make a dessert like ice cream or cake, especially when that requires us finding recipes that don’t include dairy like milk or butter. Parsing through recipe after recipe can be a hassle and a half, right? So being able to walk down the frozen section of the supermarket is a big bonus. And you can always look online to see what companies offer non-dairy desserts. They don’t have to be frozen, so you can make up a quick list of things you’re interested in trying. They’re more than likely going to wow you too!

The important thing to remember is that you can make almost any dessert dairy free, by finding some simple substitutions. Don’t rely on the old stand-by that anything good for you must taste bad; it’s simply not true. Non-dairy desserts for people who can’t have milk, cream or butter just keep getting better and better.

We have NadaMoo fan Melissa Afflerbach of Austin to thank for this recipe. This is one she loves to share with her friends, family, and yoga students, and boy are we glad she shared it with us. Thanks Melissa!

1 to 2 cups Coconut flavor NadaMoo!
3 Brazil Nuts
1 Tbs sunflower seed butter
1/2 to 1 banana
1 to 2 cap fulls of Pure Vanilla Extract
TONs of Cinnamon (tons)
Pinch of sea salt

Blend this together … It tastes like a cinnamon roll!
