What's so great about coconut milk?
The saturated fat found in coconut milk is different from the saturated fat found in animal foods. While the saturated fats in meats and whole dairy products for some people cause the liver to produce too much cholesterol, there is no evidence that saturated fat intake from coconut has any harmful effects.*

Why does the ingredients list "contains tree nut (coconut)" ?
Whether coconut should be considered a tree nut is controversial. The FDA mandates that coconut be listed as a tree nut for labeling purposes. However, as the Food Allergy and Anaphylaxis Network notes, coconut allergies are extremely rare. So, in order to be compliant with the government regulations, we have to list coconut in the allergen claim. But, based on the more generally accepted list of tree nuts, Maple Pecan is the one to note (pecans).
What is inulin?
Inulins are a group of naturally occurring polysaccharides (several simple sugars linked together) produced by many types of plants. Nutritionally, it is considered a form of soluble fiber and is sometimes categorized as a prebiotic. Inulin has a minimal impact on blood sugar , and—unlike fructose—is not insulemic and does not raise triglycerides, making it generally considered suitable for diabetics and potentially helpful in managing blood sugar-related illnesses. Inulin has been shown to improve the body’s digestive track as well as its ability to absorb calcium
Inulin adds “solids” to our mix, and gives the finished product more body. Our inulin is derived from the Jerusalem artichoke.
